"Doesjel" comes from Brussels dialect "ingedoeseld" or "ingeslapen", meaning the malt is being put "to sleep". 

The original lambic tart flavour is very much there !

Very good old lambic-gueuze made of the blending of 1, 2 and 3 yr old lambic in wooden barrels.

The lambic is brewed with 60% barley, 40% wheat, last years hops and water.
