A hazy tangerine-gold colour with a small beige head and little to no lacing.
The apricot smell and the mild farm funk is pleasant to the nose. The sour funkiness is perfectly matched with a slight apricot flavour. The wood notes really help mellow this sour beer out. Brewery Note :
The apricots are stoned by hand before being soaked in 2 year old lambic. The beer extracts the taste and the aromas very quickly and the Fou'Foune, named after it's supplier, is bottled after two months. Its production is limited to 3000 liters a year. A large part of the bottles go back to the Rhone region in France where the "Bergeron"apricots come from. People there consider the Fou'Foune Cantillon as a local beer.
