Blend of 1, 2 and 3 year old lambic. Fermented and lagered in oak vessels. In this bottle the young yeast is brought to sleep ('ingedoesjeld') so the original lambic flavors are preserved. This beer has no head, just like lambic.
The lambic is brewed with 60% barley, 40% wheat, last years hop
This old-lambik-gueuze pours a beautiful orange-amber colour with no head.
The nose is greeted with a flowery citrus smell upon releasing the cork from the bottle.
The taste is tart and orangey, leaning towards clementine-like in flavour. Sour strawberry too. The oak from the vats used has done much to smooth and even this beer out, and as in the nose it lends wood and vanilla.
Hints of barnyard here and there, but very mild.
Medium mouthfeel with no carbonantion what's so ever.
Very good drinkability. this is one of the most drinkable gueuzes I have ever had; it retains a strong sourness while having a smooth and balanced character without taking away it inherently gueuze-y qualities.
